Picturesque Plating

This page will highlight plating techniques and designs with some of my desserts.

As an painter uses canvas and palette, so I will use my desserts on plates.

Chocolate and Raspberry

My first try, I used some of the chocolate ganache and raspberry mousse to decorate the plate.  Added a few raspberries for more color.

Deconstructed Pink Berry Cheesecake

2017's Valentine's dessert, cookie crumble, tri-berry cheesecake (dyed pink), blueberries, raspberry & blueberry coulis drizzle, and a grilled peach filled with cheesecake (before the berries and dye were added).

Lemon Lava Cake

Lemon has always been my Mom's favorite dessert flavor. For a Birthday/Mother's Day treat I tried my hand at a Lava Cake (I didn't butter my ramekin enough so it stuck and exploded when I went to plate).

Garnished with lemon and mascarpone mousse, raspberries, candied lemon slice and some raspberry coulis.

Panna Cotta - with Raspberries

With berries in season I thought it would be fun to pair it with some Panna Cotta.

Garnished with raspberries, some mint leaves, and a raspberry coulis dots.

Apple Cinnamon French Toast

For Valentine's Day 2018, I made a Post Valentine's Brunch of French Toast; with baked apples in cinnamon and topped with Crème Chantilly.  Served with a side of heart shaped sausages and some freshly whipped maple butter.

This could also be classified under my Boozie Desserts since I used Bailey's Vanilla Cinnamon Irish Cream in 3 different elements in this dish.

Panna Cotta Brûlée

Coconut Panna Cotta with a brûlée top, lime gelatin base.
Served with smashed cookies toasted coconut and a cherry chutney.

White Chocolate Cherry Cake

White Chocolate cake with chopped cherry bits inside, topped with a white chocolate shell drizzle, a cherry coulis on the side, and 2 cherries dipped in white chocolate.

Pineapple IPA Cake

This dessert is what I believe to be the perfect summer cake.  It's a pineapple cake with chopped strawberries and a strawberry mousse frosting.  For plating purposes I sprinkled toasted coconut.

I have another picture of this (from a different angle too) under my Boozie Desserts since I used a Pineapple Beer to pair with it.

Lemon Lush Cake with Raspberries

Lemon cake with lemon curd inside, served with raspberries, mascarpone mousse, and raspberry coulis.

What makes this a "Lush" cake is the limoncello brushed onto the cake as it cooled.

Christmas Plate 2019: Cranberry Tart

Nilla Wafer crust filled with a Cranberry filling and decorated with Christmas flowers and foliage on a silver charger plate.

Behind the Scenes: Chocolate Raspberry Chipotle 

I entered my first online collab with this dessert.  A Chocolate Cake with a hint of Chipotle in the batter.  A Whipped frosting and fresh Raspberries top and fill the inside of this beauty.  More pictures can be found on my Cake page.

Maple Pecan Cheesecake

Pecan crust filled with a mascarpone Cheesecake filling and topped with maple pecan pieces and cream rosettes, decorated with autumn colored maple leaves.

Amaretto Almond Pie

I've been Apple Pie for my family's Thanksgiving for years, but never thought of adding Amaretto until recently.  Add some Vanilla Beam ice cream and now you have a dessert in which to be truly thankful for.
